
Papa’s Opakapaka
1- 1/2 lbs red or pink snapper
1/3 cup milk
Crushed round crackers or breadcrumbs
4-5 chopped scallions or onions
Juice of 1 lime
1/4 tsp. Ginger
1/4 tsp. Salt
Freshly grated pepper
Dip fish in milk and then crumbs. Brown in 2-3 tablespoons butter until fish is flaky. Remove from pan and keep warm. Add lime juice and seasonings. Cook down slightly. Pour over fish and serve immediately. Serves 4.
